I don’t know anyone who doesn’t enjoy a good pancake, especially in the mornings. Pancakes are a staple breakfast in many homes, and for good reason: they’re amazing. I’ll be honest, I even enjoy pancakes from a boxed mix. However, nothing beats a homemade pancake.
This week I decided I wanted pancakes but not the everyday kind, so I went with German pancakes. As I was also feeling particularly lazy, I didn’t want to go to the store so I just grabbed the first items I could find: almonds and white chocolate morsels. The end result was absolutely delicious– had great texture and the flavors mixed well together. I will definitely be making this German pancake again because, yum, and it’s super easy!
German Pancakes
Ingredients
- 3 large eggs
- 1/2 cup milk
- 2 tbs. sugar
- 1 tsp. vanilla or almond extract (I used almond for this one)
- 1/2 tsp. salt
- 1/2 cup all purpose flour
- 1 tbs. butter
For the topping
- roughly 1/4 cup chopped almonds
- roughly 1/4 cup white chocolate morsels
- powdered sugar
- maple syrup
Preparation
- In a bowl, mix together all of the ingredients until you have a smooth batter. If you want thinner pancakes, add more milk by 1/4 cups.
- In a cast iron skillet or pan, melt your butter, then pour pancake batter in.
- Bake your pancake in a 400ºF oven for about 12 minutes, then remove and sprinkle the almonds and white chocolate morsels in the center of the pancake. At this point it should be starting to rise and turn golden brown.
- Return to the oven and bake for another 8-10 minutes, or until your pancake has fully risen and is an even golden brown color.
- Remove from oven and transfer to a large plate. Your pancake will begin to shrink down a little when you remove it from the oven–that’s OK. Sprinkle with powdered sugar and drizzle with maple syrup. Serve and enjoy!
